I was searching for recipes that use Almond Flour and ran across not only a great recipe but also a blog I will now follow. Livesimply.me has some great recipes and I love how she focuses on cooking real food and cares about making things healthier for her family.
I made this bread last night and it is already gone!
Almond Flour Banana Nut Bread
2 1/2 Cups Blanched Almond Flour
1 1/2 Teaspoon ground cinnamon
1/2 teaspoon salt (she said to use good quality, but I just had regular salt)
1/4 teaspoon ground nutmeg
1 teaspoon baking soda
1/2 cup Raw Honey
1/4 Cup Whole Milk Yogurt (I used fat free Plain Greek Yogurt because apparently my store doesn’t sell whole milk yogurt)
2-3 very ripe bananas mashed
1 tsp. pure vanilla extract (she made hers homemade)
1/4 cup chopped pecans (her recipe called for walnuts)
Preheat the Oven to 350 degrees
In a small bowl, mash the ripe bananas and set aside
In a large mixing bowl mix all of the dry ingredients (almond flour, cinnamon, nutmeg, salt and baking soda)
In a medium bowl whisk the eggs. Add in the honey, yogurt, mashed bananas, and vanilla. Whisk together until combined
Stir the wet ingredients into the dry ingredients until combined (I had a little helper with the mixing, my sweet Hailey loves to help me bake)
Fold in the Pecans
Pour the batter into a greased loaf pan (grease with butter) and bake for 50 minutes or until center is firm.
Let cool before flipping it out of the pan. Serve warm.
