Bolognese

My family loves this sauce, the only complaint I have is it’s a lot of chopping and so the prep time is a little exhausting.  But it’s so worth it.

Ingredients:
(This is the basics, see below for some really good additions)

– 1 Large Can Crushed Tomatoes(I often use two cans bc I make this for my extended family)
– 1 diced White Onion
– 3 tbsp Olive Oil
– 1/2 cup diced Carrots
– 1/2 cup Diced celery
– 1/2 cup diced red bell pepper
– 4 cloves minced garlic
– 1/2 cup chopped Italian Parsley
– 1 lb Ground Beef
– 1 lb Ground Sausage
– 1/2 Cup Fresh Chopped Basil
– 3/4 cup Fresh Parmesan Reggiano
– 2 tsp Salt and Pepper to Taste

Additions
Add all of these or pick your favorites, all they do is add flavor!
Diced Button Mushrooms
Diced Yellow Squash
3 Tbsp Red Bell Peppers

Prepare
Dice all vegetables
Saute Onion until Translucent, add carrots, celery, bell pepper and saute until tender. Add Garlic and cook another 2 minutes. Add Ground Beef and Pork and brown. Add Crushed Tomatoes and bring to a slight boil and then reduce heat to low and let simmer for at least 30 minutes, longer for more flavor. Add Fresh Basil and Parsley in the last few minutes. Add the freshly grated Parmesan Reggiano at the end. (We love Parmesan in my family so we often add even more then this)
**Note: IF you lightly salt and pepper the veggies while sauteeing it brings out their flavor**
Serve over your favorite pasta.
OR do what I often do and skip the pasta and serve over Spaghetti Squash.
