Corn Bread

Searching for a yummy corn bread recipe to make for Thanksgiving.  Created this last night…

2 Cups Yellow Corn Meal
1 tsp Salt
1 1/2 Tbsp Sugar
2 Tsp Baking Powder
1/2 Tsp Baking Soda
1 Cup Buttermilk
2 Eggs
1 Can Creamed Corn
2 Roasted Fresh Corn
1 Can Chopped Green Chilis (optional…my husband is not a fan of putting this in his Cornbread, so I left it out, but it’d be good : ) )
2 Tbsp Butter

Roast Fresh Corn: This is how I always grill corn and it’s really good. Place the corn on a foil square, dot with butter, salt and pepper lightly, and close the foil tightly. Place on grill and cook for about 10-15 minutes.

Preheat Oven to 425
Place Iron Skillet in Oven
In a Medium Bowl Combine the Cornmeal, Salt, Sugar, Baking Powder, Baking Soda. In a large bowl Combine the Buttermilk, Eggs, Creamed Corn, Fresh Corn, Green Chilies, mix well. Combine the dry and wet ingredients and whisk together thoroughly.
Remove the Cast Iron Skillet from the oven (careful it’s hot!) Swirl two tablespoons of butter on pan and add mixture. Bake until golden brown, about twenty minutes.
