My Guacamole

I am pretty well known for my guacamole and therefore I use it as my go to recipe when I need to bring a dish to a party.  It’s easy, it’s yummy and it might very well be one of my favorite foods! Every time my family gets together they insist I make this….

Avocado 2

Ingredients
Avocado (3-7 depending on how big and how many you are serving. I usually make a lot)
(All Ingredient quantities are estimates and based on using 6 small avocados)
1/2 cup Diced Green Onion
3/4 cup diced tomatoes
2 Lemons
1 Jalapeno (leave in the seed if you like it spicy)
1 Small Can Diced Green Chilies
garlic salt
3/4 cup chopped cilantro

Directions:
Cut the Avocados lengthwise and scoop out flesh with a spoon. To remove seed hit a knife into the seed and gently turn, if the avocado is ready and ripe it should be easy to scoop it out.
Add all other ingredients except garlic salt and lemon juice. Mash the mixture together until smooth (I use a potato masher or just a big fork). Add the juice of 1 to 2 lemons depending on taste and 1/2 a tbsp of garlic salt, more garlic salt if it’s a very large batch, and again this is also to taste. I usually have several taste testers with chip in hand letting me know if I need more lemon and garlic. If you don’t have that give me a call I’m thinking I can spare a few.
