Squash is one of my favorite foods….zucchini in particular, but I love all varieties and it’s such a versatile vegetable you can make it a full meal, a side or even a substitute for some other ingredient, like pasta.
One of my favorite ways to eat summer squash and zucchini is very basic and easy.
I make this all the time and I usually make a lot of it, for one it cooks way down and two its so healthy you can eat a lot of it without feeling guilty.
3 yellow summer squash
3 medium to small zucchini (they taste better than the great big ones)
1 medium white onion diced
2 tbsp Olive Oil
3 cloves minced garlic
1 tsp Salt
1 tsp pepper
1/2 cup Parmesan cheese
Red Pepper Flakes (optional)
In a very large skillet, saute the onion in the olive oil until translucent, add garlic and cook for about one to two minutes then add the squash and zucchini. Mix in the pan so the onions are not stuck at the bottom and turn the heat down to medium low, cover.
Let cook for about twenty minutes, sometimes more. The longer you cook this the thicker the
“sauce” will be. There is so much liquid in the squash and zucchini a sauce will form from the water and sauteed onions and garlic. Or at least my daughter calls it a sauce.
Add the Parmesan at the end and if your like me and everything is better with a kick, add some red pepper flakes and a a couple of teaspoons of Sriracha. Enjoy, it’s good for you!!
