Zucchini Pasta

Low Carb and Healthy…what’s better then that?

Ingredients
2 lbs Zucchini
Favorite Pesto
1/4 cup fresh grated parmesan
2 tbsp. Olive Oil

Prepare:
Use a potato peeler and make long thin strips of zucchini. When all are peeled put in a large frying pan with 2 tbsp olive oil and saute for about 2 minutes. Mix in pesto and toss for about one minute. Remove from heat add grated Parmesan and enjoy!

 

**add spaghetti squash to this, it’s good too!
